There are some posts on here where one KOC member installed an iPad into the dash of a Mk1 Kuga and another member made a holder/stand to fix their tablet into a Mk1.
Clearly they're different cars but they may give you some useful info, from recollection I think both threads included some pics. I'll have a look later on and see if I can find them.
