Distance to empty will be calculated on your mpg wouldn't it?
If you have X gallons in the tank and average Y miles to the gallon this would equate to your distance to empty?
If your mpg declines say for example due to driving style or weight of load etc then the distance to empty would decline accordingly.
When I first got my Mk1 I was getting 400 something miles from a full tank but over time as the engine loosened and the mpg increased the distance to empty soon increased to circa 500 miles to a tank.
Thus that's how I thought distance to empty was calculated.
